There’s something special about homemade sugar cookies soft in the middle, lightly golden on the outside, and perfect for decorating (or eating straight from the tray).
After making a batch recently, I thought I’d share the recipe because these turned out exactly how a good sugar cookie should be: soft, sweet, and simple.
Whether you want to decorate them with icing or just enjoy them plain with a cup of tea, this recipe works brilliantly.
🍪 Ingredients
- 400g sugar (about 2 cups)
- 225g margarine
- 2 eggs
- 240ml buttermilk
- 5 tsp baking powder
- 2 tsp bicarbonate of soda
- 1 tsp salt
- 1 tsp vanilla extract
- 690g plain flour (about 5½ cups)

1. Cream the Ingredients
Cream together the sugar, margarine, and eggs until smooth, light, and fluffy.
2. Add the Buttermilk
Slowly stir in the buttermilk and mix until combined.
3. Mix the Dry Ingredients
In a separate bowl, combine:
- Plain flour
- Baking powder
- Bicarbonate of soda
- Salt
4. Make the Dough
Slowly add the dry ingredients into the wet mixture and mix until a dough forms.
5. Chill Overnight
Cover the dough and place it in the fridge overnight for the best results.
This helps improve the texture and makes the dough easier to roll out.
6. Roll & Shape
Roll out the dough to around 6–12mm thick, depending on how soft and thick you like your cookies.
Cut into shapes if you want and place them onto a baking tray lined with baking paper.
7. Bake
Bake in a preheated oven at 190°C (170°C fan) for around 8 minutes.
⚠️ Important:
Don’t let them brown too much. These cookies are meant to stay a soft pale cream/light golden colour.
